Long-stem indicating thermometers that are accurate within 0.5 degrees Fahrenheit plus or minus for the applicable temperature range shall be provided for determining temperatures of pasteurization of products in vats and for verifying the accuracy of recording thermometers. Short-stem indicating thermometers that are accurate within 0.5 degrees Fahrenheit plus or minus for the applicable temperature range shall be installed in the proper stationary position in all high-temperature short-time and dome-type pasteurizers and all storage tanks where temperature readings are required. Recording thermometers that are accurate within one degree Fahrenheit plus or minus shall be used on each pasteurizer to record pasteurization temperature.
