Subsection 001-346-7-2 - Manual Ware-washing, Sink Compartment RequirementsA. A sink with at least 3 compartments must be provided for manual washing, rinsing and sanitizing equipment and utensils.B. Sink compartments must be large enough to accommodate immersion of the largest equipment and utensils. If equipment or utensils are too large for the ware-washing sink, then alternative equipment specified in Section 7, Subsection 2(C), must be used.C. Alternative manual ware-washing equipment may include:1. High pressure detergent sprayers;2. Low pressure spray detergent foamers; or3. Other task specific cleaning equipment.
