Section 2VAC5-585-490 - Pasteurized eggs; substitute for raw eggs for certain recipes and populations.*

Pasteurized eggs or egg products shall be substituted for raw eggs in the preparation of foods such as Caesar salad, hollandaise or bearnaise sauce, mayonnaise, meringue, eggnog, ice cream, and egg-fortified beverages that are not:P

1. Cooked as specified under subdivision A 1 or 2 of 2VAC5-585-700;P or
2. Included in 2VAC5-585-700 D.P
