The facility shall develop written policies and procedures that govern all dietetic activities. Policies and procedures must include food handling procedures, length of duration for leftovers, and opened packages of commercially prepared food in accordance with chapter 44:02:07. The policies and procedures shall be reviewed biennially and revised as necessary.
