Section 8:43G-10.3 - Dietary staff qualifications(a) There shall be a food service director who has a baccalaureate degree from an accredited college or university in food, nutrition, food services management, or a related area, or has at least four years of experience in food services management in a health care facility and successful completion of Food Management Certification (FMC) and Dietetic Assistant programs or their equivalents.(b) A registered dietitian shall have full-time responsibility for the clinical aspect of the dietary service.N.J.
