Rule 37.110.228 - LIGHTING(1) Permanently fixed artificial light sources must be installed to provide at least 50 foot-candles of light on all food preparation surfaces and at equipment or utensil washing work levels.(2) Permanently fixed artificial light sources must be installed to provide, at a distance of 30 inches from the floor: (a) at least 20 foot-candles of light in utensil and equipment storage areas and in lavatory and toilet areas; and(b) at least 10 foot-candles of light in walk-in refrigerating units, dry food storage areas, and in all other areas. This requirement includes dining areas during cleaning operations.(3) Shielding to protect against broken glass falling onto food must be provided for all artificial lighting fixtures located over, by, or within food storage, preparation, service, and display facilities, and facilities where utensils and equipment are cleaned and stored.(4) Infrared or other heat lamps must be protected against breakage by a shield surrounding and extending beyond the bulb, leaving only the face of the bulb exposed.Mont.
