Section I-979 - Sausage in Oil, Preparation Temperature and Time [Formerly 49:3.2001]
A. Sausage prepared and packed in oil shall be heated to a temperature e of at least 160 F, and this temperature shall be maintained within the can for not less than 30 minutes. Cans should show good vacuum.
