Section 16-18-2-371.5 - "Water activity" or "Aw"

"Water activity" or "Aw" refers to the:

(1) measure of the free moisture in a food; and

(2) quotient of the water vapor pressure of a substance divided by the vapor pressure of pure water at the same temperature.
