Section 114107 - Testing equipment and materials; concentration of sanitizing solution(a) Testing equipment and materials shall be provided to adequately measure the applicable sanitization method used during manual or mechanical warewashing.(b) The concentration of the sanitizing solution shall be accurately determined to ensure proper dosage.Ca.
