Section 3-50 - Potentially Hazardous Food, Slacking

(a) Frozen potentially hazardous food that is slacked to moderate the temperature shall be held:

• (i) Under refrigeration that maintains the food temperature at 41^oF (5^oC) or less; or

• (ii) At any temperature if the food remains frozen.
