Section 13:92-4.8 - Kitchens(a) Kitchens shall be clean, well lighted, properly ventilated, in compliance with all local health ordinances and provided with essential and proper equipment for the preparation and/or serving of food for the number of persons to be served. Adequate storage, refrigeration, and freezer facilities shall be available.(b) The kitchen area shall be convenient to the dining room. If the food is prepared outside of the facility, provision shall be made at the point of source for transporting prepared food and keeping it at proper temperatures.(c) The kitchen and food storage areas shall be in compliance with the applicable rules at N.J.A.C. 8:24.N.J. Admin. Code § 13:92-4.8
