Rule 15-11-55-1.13.6 - Food Safety and Food Manager1. All kitchens and/or food/snack preparation areas in a child care facility must be inspected as part of the child care inspection process.2. Each child care facility must have a Certified Food Manager meeting the standards set forth in Rule 1.2.2(1)(g) The only exception would be if two facilities had COMPLETELY different operating hours. If this situation exists then one Certified Food Manager could serve more than one facility. Should such occur, documentation to that affect must be in the each facility's file.3. A Certified Food Manager shall be present during meal preparation. In the absence of the Certified Food Manager, an individual trained in food service must be present.15 Miss. Code. R. 11-55-1.13.6
