Section XXIII-3705 - Lighting Intensity [formerly paragraph 22:27-1]A. The lighting intensity: 1. in walk-in refrigeration units and dry food storage areas, and in other areas or rooms during periods of cleaning, shall be at least 110 lux (10 foot-candles) at a distance of 30 inches (75 cm) above the floor;2. in areas where there is consumer self service, areas used for handwashing, warewashing, equipment and utensil storage, and in toilet rooms, shall be at least 220 lux (20 foot-candles) at a distance of 30 inches (75 cm) above the floor;3. at a surface where a food employee is working with unpackaged potentially hazardous food or with food, utensils, and equipment such as knives, slicers, grinders, or saws where employees' safety is a factor, shall be at least 540 lux (50 foot-candles) at a distance of 30 inches (75 cm) above the floor.La.
