Rule 25-B3303 - INVESTIGATION AND CONTROL RELEASE OF FOOD EMPLOYEE FROM RESTRICTION OR EXCLUSION
3303.1

The Department shall release a food employee who was infected with Salmonella Typhi from restriction or exclusion if the food employee's stools are negative for Salmonella Typhi based on testing of at least three (3) consecutive stool specimen cultures that are taken:

(a) Not earlier than one (1) month after onset;
(b) At least forty-eight (48) hours after discontinuance of antibiotics; and
(c) At least twenty-four (24) hours apart.
3303.2

If one (1) of the cultures taken as specified in section 3303.1 is positive, repeat cultures are to be taken at intervals of one (1) month until at least three (3) consecutive negative stool specimen cultures are obtained.

3303.3

The Department shall release a food employee who was infected with Shigella spp. or Enterohemorrhagic or Shiga Toxin-Producing Escherichia coli from restriction or exclusion according to this Code if the food employee's stools are negative for Shigella spp. or Enterohemorrhagic or Shiga Toxin-Producing Escherichia coli based on testing of two (2) consecutive stool specimen cultures that are taken:

(a) Not earlier than forty-eight (48) hours after discontinuance of antibiotics; and
(b) At least twenty-four (24) hours apart.
3303.4

The Department shall release a food employee who was infected with hepatitis A virus from restriction or exclusion if:

(a) Symptoms cease; or
(b) At least two (2) blood tests show falling liver enzymes.
