Shellfish shall be protected from contamination while being transferred from one point to another during handling and processing.
In accordance with section 1809, lighting fixtures, light bulbs, skylights, or other glass suspended over food storage or processing activities in areas where shellfish are exposed shall be of the safety type or protected to prevent food contamination in case of breakage.
Food contact surfaces shall be protected from contamination by adulterants by using cleaning compounds and sanitizing agents only in accordance with manufacturer label directions and sections 2204 and 2205.
