Physical facilities shall be adequate in size, construction, and design to facilitate maintenance and the sanitary operation of the food processing operation in accordance with 21 CFR 110.20 - Plant and grounds, 21 CFR 110.35 - Sanitary operations, 21 CFR 110.37 - Sanitary facilities and controls, and this Code.
The floor of every workroom shall be maintained, as far as practicable, in a dry condition. Where wet processes are used, drainage shall be maintained and false floors, platforms, mats, or other dry standing places shall be provided. Where practicable and appropriate, waterproof footgear shall be provided.
