Food handlers shall be required to and shall cleanse their hands before beginning work, and again after each interruption of work.
Hands shall be kept clean at all times when persons are engaged in handling food, utensils, or equipment.
In lieu of running hot and cold water, each food stand shall be provided with suitable cleansing devices or liquids containing a detergent-sanitizer of a kind and strength approved by the Director of Environmental Services and in such quantity as the Director may approve.
Paper towels for drying hands shall be provided at each stand.
