Section 580-5-30K-.12 - Nutritional ServicesThe program shall ensure that nutritional requirements are met on an individual basis.
(1) Meals shall be appropriately scheduled.(2) The programs shall ensure that clients receive three (3) meals a day. Balanced planning shall include the four (4) basic food groups. Meals will meet either USDA or American Dietetic Association (ADA) requirements for adequate nutrition.(3) Special diets for medical reasons shall be provided only with physician's order and shall be monitored and documented by program staff.(4) A licensed dietician shall be consulted when indicated.(5) Menus shall be available including special diet menus. If substitutes are prepared, they shall be posted on the menu.(6) Meals shall not be denied as punishment.(7) All foods shall be clean, pure, wholesome, free from spoilage, stored in appropriately labeled containers, and safe for human consumption.(8) Only Grade A, pasteurized dairy products shall be used or served.(9) All food containers shall be stored above the floor on clean surfaces and shall be covered for protection against contamination.(10) Individual food portions, once served, shall not be reused for human consumption.
